but women are way more likely to have irrational reasons to avoid meat in the meal - you know, like "poor animals" or "it makes for a better use of our resources if we don't eat as much beef", while the men I know who does it do it for good reasons, like it's not tasting good, they don't feel like it, or it disagrees with their stomachs.

You're assuming there are no women who also have the second reasons of taste or upset tummies to use as a reason for avoidance? Imo, your example here gives me more evidence that women are less likely to eat beef: some actively won't like it (like your male example) and more will pass based on economics and/or sympathy.
