They've done that with Cheddar and other cheeses, and I can still tell the difference between good cheddar and bad cheddar. (but then, I'm a cheddar-whore)

Cheddar is a bad example, since that label has been dismissed by the EU as generic. There are many other cheeses who are protected, for example Stilton, Gorgonzola and Feta.
