I am not disagreeing on having a DPS pet and a Tank pet to my understanding I can have a total of 5 pets (but you really want 4 since you need an extra spot swap them) thus of the 4 I want one to be a cat and one to be a wolf (Phelix would get this, it has nothing to do with wow)

So skinning/leatherworking would provide enough income? Would it be better to do skinning/mining on my hunter and my paladin just leatherworking/blacksmithing with me sending the raw materials over the mail system?

Aside from occasionally making nice gear for your hunter you can send all the other stuff to your enchanter to disenchant and use for mats to level enchanting. It helps offset the absurd cost of leveling your enchanting skill.
