Tends to overpower almost everything else. Bacon on a cheeseburger is a pathway to just having poor quality meat, cheese, and everything else. The bacon will mask almost anything else. It even overpowers onion.

Bacon dipped in chocolate. You'll get the initial sweet...then all bacon all the time...and maybe it will finish with a bit of chocolate taste along with the bacon.

But I agree...just have the bacon on the side.
