If the Others/White Walkers kill you they can bring you back as a zombie like critter, which the natives of Westeros call wights.

Of course, there are also fire-zombies (essentially), and they talk and act like normal people (you meet them later on, and I won't spoil anything by referring to any particular ones except to say that someone at "The Red Wedding" in book 3 ends up as one).
