Well yes, to everything except your last clause. You are absolutely correct that what defines a slave is the status of being property, and the "freedom" they possess is the status of not being property. But in the face of brutality, poverty, squalor, lack of legal standing, and corruption, I find the attention people pay to this least tangible of issues rather bemusing.
Presumably if you were in a situation where 'this least tangible of issues' were imposed upon you, you might find it less bemusing. I do not doubt that if given the choice between being poor (which even today pretty much brings about the rest of your list) and being a slave, most people would choose the former. Peasants could own things, and therefore could theoretically move out of poverty. And legal standing is one of the things I specifically mentioned peasants had and that slaves did not.
And to your question: for peasants and equivalent urban laborers, very little.

The first rule of being a ninja is "do no harm". Unless you intend to do harm, then do lots of harm.
