He gives Berelain a connection to the Queen of Andor, he's the LCC of the Children, who are still significant military force and retain some political influence and also a connection to the Dragon Reborn through Elayne (who she thinks the Dragon intends to marry). Add to that he's apparently the most handsome man alive, I am not too bothered that Berelain fell in love with him so quickly.
The power-bloc Elayne assembles through this book is something any ruler, especially a weak power, would leap at the chance to become part of. In Berelain's case, where she has apparently trained her genitals to respond to potential benefits to Mayne, such an alliance is the sexiest thing she has ever encountered. When she learns that Galad is Rand's half-brother, his other half-brother is marrying the Amyrlin, and Galad's cousin Caraline is marrying the King of Tear, Berelain's love will get even stronger.
