Wheel of Time doesn't struggle with concepts surrounding 'eternity'. According to RJ a tied off weave should last forever if the knot holds, and cuendillar is an example of an eternal substance. I wouldn't be surprised if the Sun was a tied off weave, or some equivalent (by the Creator of course).
