Next year, Sanderson is doing two different tours for "Way of Kings" and "Towers of Midnight". Each will be shorter than the tour for TGS.

As for sacrificing some of the tour so he could spend two more weeks writing... No. Two more weeks worth of writing isn't as valuable as meeting and interacting with the author.
