Good Omens is a lovely book, but it's not exactly plumbing the depths of character development.

What I suggest is picking a sub-series within the Discworld - the Death series, the Watch series, the Witches, Tiffany Aching (more young adult, but still good), Moist von Lipvig (I dislike these, myself), the Wizards, Rincewind.

If I were you, I'd start with Guards!, Guards!, and the Watch books first.

But! The joy of Pratchett is that you can read him in any order. I'm linking you to the very ordererly wikipedia page, and telling you to watch out for the Death/Sto Helit books, the Watch books, the Wizards/Unseen University books, and the Witches. http://en.wikipedia.org/wiki/Discworld

Pyramids, The Amazing Maurice and his Educated Rodents are great standalones.
