I have always noticed a flavor difference, but assumed it was organic vs not. If what you described is true, this could be one cause for flavor difference. My son drinks organic whole milk a home. At school he won't drink milk because it's 2% nonorganic. I wonder if this is why.
That's interesting, because according to Wikipedia, it's the UHT (so ultrapasteurized) milk that has lost more of its nutritional value, and so you'd think that would be the non-organic milk... but apparently not. How confusing.
And yes, sounds likely. The difference between pasteurized and ultrapasteurized is far more significant than that between different varieties of each of the two kinds, in my experience anyway. Not sure if I've ever tried organic milk (I'm not even sure what the real definition is there).
