They area multi-textured nightmare, and that usually doesn't bother me. You have that layer of just- hardened chocolate with the gooiest marshmallow in the world with a crispy cookie on the bottom. Yuck.

My favorite cookies are molasses and spice cookies. My father's aunt made them famous. Seriously. I've met people, they hear what town I'm from and compare the last name. They say, "OMG are you related to Grace?!? She makes the BEST molasses cookies!"

I have the recipe, but I think she left out a secret ingredient. No matter what I try I can't get them as dark as she did. They are soft, not like ginger snaps (which I also love) so I know I don't just have to bake them longer. I have tried all the darkest varieties of molasses I can find. Perhaps I will try all brown sugar and no white sugar, to see what happens. She is now in a nursing home and ... doesn't have much of her mind anymore. I may never eat her cookies again, and I can't get the secret, try as I might. But that's depressing, so...
