Flour can do it too. I thiiiiiink it's the higher protein flour (unbleached and bread) that can make them darker too.

Ooh, and different sugars. Apparently some corn syrup subbed for some of the sugar will do it too.

Yeah, corn syrup would probably do that just fine. She'd have to make sure to either up the temperature a little, extend the cooking time, or reduce the amount of liquid in the recipe to make sure they end up crunchy like she was looking for. Possibly a combination of corn syrup and clarified butter to reduce the liquid would do what she wants?
