Yeah, I'm bored enough to (attempt) to start a pointless discussion with a pointless topic.
Today's topic: Cheese. Favorite? Least favorite? Good? Bad? Useless?

I love Irish and English cheddars. The older and sharper the better. But I also love chevre and mozzarella di bufala (which I've been eating a ton of lately because it's fantastic with the abundance of tomatoes and basil we have this time of year). And I love stilton.
I like most cheeses except brie. I keep trying. I can eat it if it's doctored up (warmed through with fruit and nuts or in phyllo with mushrooms/onions/balsamic vinegar) but even then I can't eat the rind. And without the doctoring the innards have too much of the taste of the rind. Blech. It just tastes funky to me.

Those are processed, yes. As is "American" cheese. As is most cheese you find in supermarkets.
