Pft, you can still spoil yourself! Just pick things that can freeze nicely, if you can't stand cooking one portion.
I'm single as hell, and I have a cooked meal of some sort most nights. I just make a full meal and then eat it over three or four days, fridging it in the meantime. When I make my Awesome Lasagna*, that thing lasts six straight days and is delicious on every one of them. I guess you have to not crave constant variety, though.
I have a list of meals that I enjoy. It's not a long list, but it lets me rotate on a six or seven week basis. I make lasagna, homemade mac and cheese, meatballs, spaghetti meals, cacciatore, casserole, mushroom cheeseburgers, tacos, and when I'm feeling lazy I'll do a frozen pizza or some fish, or homemade deli sandwiches. It may seem plain and repetitive to some, but I know what I like, and I like to eat it. I could expand the list a bit, but then I'd have to wait longer to eat something I love, and that sounds like a terrible idea.
*It doesn't have anything special or interesting in it; that's what makes it awesome
