I'm not sure that is the more logical choice - there are a fair number of different KFC style chicken fast food places around London which are halal and I'm not aware of any of them running a dual menu. If it was more logical, I would have thought at least some of them would - it seems to me like a bad idea for a fast food place to start offering a mixture of halal and non-halal food.... you'd need to double up on a lot of the kitchen equipment to make sure of not getting things mixed up and even then a lot of people would worry about it.
Having worked at far too many such places, I'd say you're quite right - it's all about practicality, not about thoughtlessness or intentional offense. Remember, we are talking fast food. And not only would a mixture slow things down, it would cost a lot of money and probably require more labor (I'm not sure of all the rules, but it seems like workers couldn't switch from one to the other without cleaning properly). If anything, the choice strikes me as an effort to avoid what Sareitha mentioned down below with the inflated prices and all.
