Do you think that the CGI aspect of it with live action around it would make it...look cheesy? I mean, if you want to get down to it, it can get pretty tough to watch....

I wouldn't show weaves, just their effects. Show the beam of light for balefire, the fireballs, the lightning bolts or the people hanging in mid-air. If the scene is about the channeling, for instance, Nynaeve's first duel with Moghedian, or a teaching scene, or maybe the Bowl of the Winds, I'd maybe switch to a non-real scene, like when Frodo wears the Ring, and then animate the weaves or the metaphysical results, like show the personal connections to the source and a shape trying to cut them off, representing the shield. What I would not do is show the weaves that form things like fireballs or bonds of Air.

If they can't even do justice to weaves, they might as well not even bother.

Though honestly, this is 2019. It isn't anywhere near as big a problem as you seem to think it is. At least not so long as they've got the budget for it.
