And HBO/Dan and Dave had to write the ending themselves. GOT was remarkable until this happened.

It kind of wasn't, the writers were just staggering along blindly touching goalposts, while missing the point of a lot of it. And the little changes came to a head well before running out of book material, because they got careless and made much bigger changes that undermined characterization, made plot-holes or were downright awful.
