EDIT: Wait! The Van Gogh thing stuck on Craig's fridge in The Lodger is the same one Amy had in Vincent and the Doctor. And they made a point of having the Doctor ask him more than once in the episode if he'd been, or wanted to go, to Paris. I think he even says, once, something along the lines of, "And now you can go to Paris," even though Craig's said that he doesn't want to.

They had quite a bit of Paris mentions and references in that episode. I'm not sure if it meant anything or not. With so much happening in the last two episodes, I'm not sure how they'd fit in any kind of Paris-related revelation, but anything's possible.
I like your idea about what the Doctor told Amy. Thinking on it, that is probably the most meaningful thing he said to her.
It could be that the Pandorica is in Paris.
