As far as whether he would be part of her rescue, that she picked up later from her experiences in Rhuidean.
According to her letter to Thom, she is not certain she will be rescued. If Min saw that Thom and Moiraine would be a couple (with certainty) she would know that.
In tSR she makes a comment about knowing her husband's face better than the wonder girls. When they ask her who she's talking about, she plays it off as they are all ignorant of that knowledge. However, most people take it to be a clue that she knows Thom will be her husband. Along with the fact that she tells him they will meet again and that he will survive Tanchico.
Human beings, who are almost unique in having the ability to learn from the experience of others, are also remarkable for their apparent disinclination to do so.
