Disregard my initial explanation, there is no inconsistency!
In the Potters' case, they (the people, not their residence at Godric's Hollow) were the subjects of the charm. That means, no one in the world except for Pettigrew (and then Voldemort) could physically see them.
That is not true at all.
Firstly, look at what Flitwick says. Voldy could search their village all he wants, but he wouldn't find them. It the charm only concealed the two of them, then their house would be easily visible to him. How easy for the Death Eaters to simply blow it up when they were inside. The Fidelius Charm would then only be like a permanent invisibility cloak.
Second, look at Lily's letter to Sirius (which is found in DH). She says James was getting pissed off cooped in the house, and without the invisibility cloak, couldn't go out on excursions. If James himself was the secret, he could have gone and stood in front of Voldy, and no one would know! Plus, they have Bathilda Bagshot visiting them, Sirius and Petunia sending them gifts, etc. If they were now secrets, people would not be able to locate them at all!
All that holds for them being Secret as well. Bathilda Baghot could not visit them if their house was Secret, even if they were not. And Nobody could send them gifts if their house was Secret, as owls (or Postmen, for that matter) would not find it. I don't have the book handy. Are you sure all this happens after they have been subjected to the Secrecy Charm, rather than them merely being in (normal) hiding at this point?
Lastly, there's this from DH:
And along a new and darker street he moved, and now his destination was in sight at last, the Fidelius Charm broken, though they did not know it yet. . . .
That is fine either way.
This is Voldemort about to kill the Potters. Clearly, the Breaking of the Charm makes their house visible, not just them.
That is not a given from your quote.
In the case of Shell Cottage, and 12 Grimmauld Place, it was the location of the building that was the secret, not the inhabitants.

Fair enough and I see what you're getting at, but how would they survive? Stay cooped up in their house all the time? Sure, if DD was in on the secret, he could do groceries for them, but what if Voldemort captured and distilled the secret of the Potters' whereabouts from him?
You can't do that. Only the Secret Keeper can reveal the secret. Any others in on it can be tortured all they want, but it wouldn't help.

And either way, they would not be able to interact with the world.
And before you quote Gamp's Law, remember: the Death Eaters knew the general location of #12 Grimmauld Place but they couldn't simply fire curses at it and get it demolished!
Because the location was the secret. To fire at something, it has to be there in your awareness.
If it was the Potter's that were hidden and not their house, the Death Eaters could indeed have blasted it.
But would they have known what to blast?
