The differences are not great, but the Bohairic versions tend to have more aspirated consonants where the Sahidic have non-aspirated variants (theta in place of tau, phi in place of pi, chi in place of kappa), and terminal epsilon in Sahidic becomes iota in Bohairic.

All I could list, though, was that cheap 99¢ Kindle edition I downloaded. Good to keep in mind when it comes to what is truer to tradition, rather than something that might be marketed to a few trying to learn any dialect as a second language.
