I suppose there are still hold outs, but even here in a small city in Kansas, I can get most major cheeses if I know which store's deli to check. I can even get less thought of (here, at least) cheeses like Mimolette and, recently, Manchego.
We do still love our cheddar, though. The latest cheddar craze is "how many wines/beers-cheddar variations can I sell?" Some are REALLY good. Some are meh. The wine ones tend to be far superior than the beer cheeses.
