It's one of the vegetables I'll actually seek out and all. Some good uses for it:

Eggplant parmesan (http://elise.com/recipes/archives/000220eggplant_parmesan.php)
Moussaka (ask Paul for his recipe)
Yummy topping to go over rice at a local Indian restaurant (I will/would take you there, but... well, it IS the last place I ate before getting violently ill with the flu)

The moussaka is my favorite; it's like lasagna but with eggplant instead of noodles. Hey... wait a minute! Is that what you used it for?

It was not the same thing as moussaka. It did have meat sauce, but no cream sauce. I think I might try moussaka soon. Sounds like lots of steps though.
