Heating food does not destroy a substantial amount of nutrients

Well I have heard that heating foods destroys a lot of the nutrients in them. It probably IS healthier to not cook your food.
In fact, in many cases, heating food releases nutrients into forms that your body can utilize more readily. I have no doubt that there is denaturization of some individual bits of nutrients, but, for the most part, you're rarely cooking food to the point where they lose their nutritive value.
In other words, it's "true enough" the raw food movement can use it, but false enough that it's not a practical limit on your food preparation. Cooking removes far more pathogens and toxins than it does nutrients.
