But slavery, incidentally, is not defined by the lack of freedom, though lack of freedom is a consequence of slavery. What defines a slave is that they are property of someone else, they are entirely under the domination of another.
Well yes, to everything except your last clause. You are absolutely correct that what defines a slave is the status of being property, and the "freedom" they possess is the status of not being property. But in the face of brutality, poverty, squalor, lack of legal standing, and corruption, I find the attention people pay to this least tangible of issues rather bemusing.

And to your question: for peasants and equivalent urban laborers, very little.
