He respects women who don't talk down to him and don't try to manipulate him.
Joline, for instance, he didn't respect because she treated him like dirt (as he was trying to RESCUE her), threw temper tantrums, and wanted to go storm the Seancean prisoner pens by herself.
Whereas the other Aes Sedai (dammit, what was her name?), he respected more. She treated him with respect, more or less (she is still an Aes Sedai, after all). She was thoughtful, followed Mat's as he tried to rescue them, but still stood her ground when she thought it was important.
An even better example is Mistress Anan.
So yes, he didn't automatically bow down to the women a hundred years older than him, mostly because, in his experience, they're not wiser than anyone else.
I'll admit he does tend to notice pretty women, but it's not like he goes "That Nynaeve, all she's good for is a pretty bosom and a nice set of legs."
