They copyright their designs of the characters, and the movie as a whole, and their screenplay. They don't own the original stories (which themselves were put in writing often bases on oral folklore elements). No one can go and make Cinderella 2 using Disney's designs. They can, and do, release their own take on Cinderella in various forms.
