It could just be that he prioritized surprising us with a Demandred reveal so he changed the story when he realized he hadn't been subtle with Taim and everyone could see Taimandred coming. I don't know why we need to portray him as angry, or bitter, or petulant or something. Maybe he was frustrated with himself. Maybe he found the situation humorous. Who knows?
