there is no indication that the bond directly connects things ina way that could be severed by a door shutting. It's not like there's a 'string' of saidar connecting the two at all times. The actual way that the bond works simply isn't understood at that level. So, it actually is a big assumption that the bond could be severed by the melting doorway.
It all comes back to the three ways that we know actually sever the bond - stilling/burning out, death, and voluntary release. We know Moiraine is alive, Lan's actions/condition and the speed of the events make voluntary release highly unlikely. That leaves stiling/burning out as the most reasonable explanation.
