Astronauts have coffee and tea regularly on the ISS. Too, beverages are mostly water, so as long as you don't mind instant dissolvable stuff, coffee and beer wouldn't present much of a weight problem. They're also made from plants, so, depending on what sort of grow-house they're planning to set up, you might have all of the coffee/beer you could want.

I agree with your assessment, though. I don't think most people (including myself) could be happy living on Mars. The fact that we're even giving semi-serious consideration to the problem, though, is an indication that we're living in a pretty awesome time period.
