Lack of knowledge that the One Power exists doesn't mean the One Power vanishes or is destroyed. Only that the ability to channel either becomes exceedingly rare to the point where only a few people have latent genes for it to pass on to descendants or that knowledge of channeling is lost (i.e. another Dark Age). For example, just because we can't measure phenomena in space with current technology doesn't invalidate their existence - it just highlights our technical limitations.
