We do? Wasn't that just speculation on Moiraine's part? Any number of prophesies regarding Rand wouldn't have worked if he hadn't used the Eye at that point, and since he didn't even know he could channel, I doubt more complex uses would make sense.

Then again, the Aes Sedai of the Age of Legends had no idea how to Seal the Dark One, so that couldn't be the purpose behind the Eye either.

It is entirely possible that the men and women who made the Eye figured out that it was saidin touching the Dark One that caused the taint. Remember, LTT's plan was well known and much discussed, so aspects like having to touch to DO could be something the remaining AS figured out, or knew already.
