Using a jiffy mix to make cookies is still homemade, because it's really just pre-mixing a fairly standard combination of dry ingredients
I was in the cake and cookie mix aisle in the store last weekend, and was quite disappointed in the long list of ingredients that are in said boxed mixes.

But, I think jiffy in particular has a relatively simple mix.Pretty straight forward, but even default Jiffy Baking Mix has a lot of stuff in it, I was a bit surprised when I picked up the box on my fridge because I was expecting 'Flour, baking Soda, shortening' and I saw a big list - pasted from their website to spare my fingers and keyboard some wear and tear:
INGREDIENTS: BLEACHED WHEAT FLOUR, VEGETABLE SHORTENING (PARTIALLY HYDROGENATED SOYBEAN AND/OR COTTONSEED OILS), CONTAINS LESS THAN 2% OF EACH OF THE FOLLOWING: SALT, DEXTROSE, ANHYDROUS MONO-CALCIUM PHOSPHATE, BAKING SODA, WHEY, SOY PROTEIN, CALCIUM CASEINATE, DICALCIUM PHOSPHATE, NIACIN, REDUCED IRON, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID.
CONTAINS: WHEAT, SOYBEAN, MILK
But most of that is just standard, safe stuff.
That said, there isn't much different between frozen peas you buy in the store or ones you harvest at home and preserve yourself, which I have done. Well, that's what the food companies would have you think, I'm sure. I don't even really want to think about that right now, matter of fact...
Well, I'm gonna have to disagree on that just to be a snob, I tend to feel my gardening products are superior to store-bought, which is utter BS of the 'the extra ingredient is love' variety, but I think those would be like 'fighting words' if said to my mother, veteran obsessive gardener and vegetarian. But again, that's not really cooking, it's gardening. Different field, might as well say 'it's not authentic because you didn't build that blender yourself'. I don't know, it depends so much on what you're cooking, 'homemade' is a lot like pornography vs art, "We know it when we see it".
