Because touch-screen kiosks and self-checkout counters work better and bitch less than cashiers, and many customers with sufficent brains to make the minimal adjustment to using such technology greatly perfer them to dealing with cashiers.

Of course increasing the minimum wage is going to accelerate the rate of adoption of automated technologies. But unless you take the patently foolish view that there's no economic pressure to develop automation (there is) and that automation is only going to remain cost-effective at around $15 an hour (it's not), you're merely delaying the inevitable in any case.
