It's an interesting theory, and it would certainly make Gawyn more relevant to the story than he has been so far. I don't buy the reasons you've listed for Mat giving up his foxhead medallion though. I do believe he would relinquish it to Elayne while he goes to the Tower of Ghenji but only if he thought Elayne was in danger from the Gholam.
