Though if you recall the Polyjuice scenes in the first part of the movie, they kept their own voices, so...

Only in the beginning, I think? Didn't they get surprisingly adept at mimicking Crabbe and Goyle once they were in company with Malfoy? And in the book it is specifically stated that he can hear Hermione through Bellatrix' voice.

In the beginning of the seventh movie they definitely kept their own voices. I honestly cannot remember how that's handled in the second movie, but I'm pretty sure in the book they adopt the voices of the person they transform into immediately.

Yes.

What I want to know now is how long Polyjuice Potion actually lasts. It was made such a big deal of in the second book that they only had 60 minutes, but it seems like some of the stuff they're doing here is taking much longer than that. Does a larger dose have a longer lasting effect?

Indeed.
