Take a look at her in Book 1- she's as stubborn, wide-eyed as the rest of the Emond's Fielders, and only a bit more naive. However, she's also incredibly pissed off.
She loathes Moiraine, blaming her for everything. By book 6, she's all "It's not right for Moiraine to be bowing down to Rand like that"
She's gotten much, much better at holding her temper- Salidar helped with that.
Before her block broke, Nynaeve had NO self-confidence when it came to the One Power. It was mostly just "It works, so I'll pretend not to care that I'm the Randland Incredible Hulk." (Evidence: when whats-her-name is trying to break her block in Salidar, Nynaeve admits to herself how wonderful it would be)
