Have you ever actually swung a sowrd at someone or had one swung at you? From your statements, I'd hazard a guess that the answer is "no"
Any SCA folks on the boards want to weigh in on the value of armor, cause folks just aint beleiving me when I say that knowing you are not going to get cut up like a meatloaf matters. Light-weight (less material needed) yet resiliant (C is unbreakable) IS the holy grail of armoring. Always has been, always will be and the improvement of C over steel/iron is anything but marginal.
Look elsewhere for my opinion of C weapons, in a nutshell, they have no benefit unless you have modern computer controlled manufacuting techniques (able to make micrometer fine edges), and even then the benifit is slight because you need some mass behind the weapon.
Not sure of your impracticls criteria. I have discussed manufacturing elsewhere, and it is very simple, even full plate becomes much easier because the much thinner sheets allows shaping around forms to bechilds play, especially since you do not have to worry about temper.
Summation: It is easier to make armor plates that are intended to be transformed, and the final product would be much more effective. In my book that makes it a "no-brainer"
