They were not being inspired by God as to what the requirements to be a Christian were. The prophets in Old and New Testament times, who received revelation and knowledge from God, never made any statements as to what you had to believe to be Christian.
Actually, they did, several times; Tom has already referenced the most emphatic and well known one:
But even if we, or an angel from heaven, preach any other gospel to you than what we have preached to you, let him be accursed. (Gal. 1:8)
That covers a lot of non-Christian doctrines, Mormonism among them.
Paul uses similar language in II Corinthians to dispel the contention among some early Jewish Christians that Gentile Christians had to be circumcised.
And, of course, the kicker: Acts 15:23-29, in which the Jerusalem Church in its infancy was forced to confront the circumcision issue and, after prayer and consultation with the Holy Spirit, sent out a letter specifying Christianitys minimal requirements (apart from implicit things like faith in Christ as Son of God and Redeemer from sin by His Crucifixion and Resurrection.) I cannot fault you not knowing all that (except, once again, for the instance Tom already referenced)--unless you nonetheless try to speak authoritatively on it.
Thus, how can a council of men, who did not receive any revelations from God as to what you have to do and believe to be a Christian or any guidance from a prophet of the Lord, be the ones to make the tenets for being Christian?
On what basis do you claim they received no revelations from God? A lone man fifteen centuries later claiming a revelation from God THAT NO ONE ELSE WAS EVER ALLOWED TO SEE? I accept God on faith, but cannot accept Joseph Smith on faith in defiance of two millennia of Church teaching. Given a choice between the Church Fathers teaching, in accord with the OT, NT and all that came before, or a single mans teaching a scant century ago contradicting ALL that on the basis of a revelatory document no one else ever saw, I will take God, the Church and the Church Fathers every day of the week and twice on Sunday.
